grandma's cookbook - It Is Blueberry Pancake Day - January 28th - & My Pancake Recipe!

Nearly every Saturday our grandsons come over so they can spend the night! Sunday morning I fix breakfast . . . they usually choose sausage, bacon, eggs, waffles, and coffee!  Sometimes, the boys choose blueberry pancakes, so since today is Blueberry Pancake Day, I thought I'd share my pancake recipe with you!


Homemade Dairy-Free Pancakes
  • 1 1/2 cups flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 3 Tablespoons sugar
  • 1 1/4 cups almond milk
  • 1 egg
  • 3 T melted coconut oil - or regular vegetable oil
  • 1/2 cup blueberries
Mix dry ingredients together. Combine milk, egg and oil; mix a bit. Add milk mixture and berries to dry ingredients and stir until moistened. Cook on a lightly oiled griddle until browned on both sides. Top with peanut butter or syrup and enjoy!
