I like the idea of helping children learn about business, and lemonade stands are a great first business for children. I also love making lemonade ice cream pie - in fact, I am making lemonade ice cream pie and orange ice cream pie next weekend for our Mother's Day & my birthday dinner dessert - although I think my grandson is actually likely to make the pies. At any rate, I thought Lemonade Day is a great day to share the recipe with you -
Ingredients -
As you make this pie with your grandchildren talk with them about the ingredients and how God created cows and lemon trees and aren't we so very glad He did! Lead them in thanking God for making things which are so enjoyable to eat and then thank God for each of your grandchildren as they are ever so much more enjoyable than any pie . . . even Yummie, Easy Lemonade Ice Cream Pie! :^)
- 1/2 gallon of vanilla ice cream - makes two pies
- 2 small cans of frozen lemonade - the smallest cans you can find or use one 12 ounce can if you are making two pies.
- 2 graham cracker pie crusts
- Yellow food coloring - optional
- 2 pints of whipping cream
- Allow ice cream to soften and thaw lemonade - do NOT add water to the lemonade, you will use it as a concentrate
- Mix whipping cream in a large bowl until fluffy
- Add softened ice cream and mix together
- Add lemonade as concentrate - do NOT add water to the lemonade
- Add a few drops of yellow food coloring
- Spoon into pie crusts and freeze until ready to serve
