Tomorrow, August 1st is National Homemade Pie Day!

Pies bring a lot of joy to people - and while you may not want to bake a pie when the outside temps are high, there are many wonderful recipes for pies which do not require baking. I am very happy to share with you one of my family's favorite summer pies - Lemonade Ice Cream Pie, but first, let's look at a few fun pie facts - did you know . . .

  • In America alone, 186 million pies are sold in grocery stores every year.
  • According to a survey, 47% of Americans associate the word ‘comforting’ with pie.
  • In the United States, apple pie is a crowd favorite.
You will find more information about this tasty day and more fun facts at this link. Now for a recipe you could make for your family tomorrow - Lemonade Ice Cream Pie . . .
Ingredients -

  • 1/2 gallon of vanilla ice cream - makes two pies
  • 2 small cans of frozen lemonade - the smallest cans you can find or use one 12 ounce can if you are making two pies.
  • 2 graham cracker pie crusts
  • Yellow food coloring - optional
  • 2 pints of whipping cream
Directions -
  • Allow ice cream to soften and thaw lemonade - do NOT add water to the lemonade, you will use it as a concentrate
  • Mix whipping cream in a large bowl until fluffy
  • Add softened ice cream and mix together
  • Add lemonade as concentrate - do NOT add water to the lemonade
  • Add a few drops of yellow food coloring
  • Spoon into pie crusts and freeze until ready to serve
  • Enjoy:^)
This is a super easy pie to make - be sure to allow your grandchildren to help with the adding of ingredients, mixing, scooping into the pie crusts, and of course with the "tasting"! :^) I love this pie in the summer as it is cool, slightly tart, and involves no baking, cooking, or heating in any way! You could also make this pie substituting frozen limeade for the lemonade and then use green food coloring in place of the yellow food coloring or frozen orange concentrate (1/2 can for one pie). When you serve, top with whipped cream and enjoy!
