Happiness Happens Month & Day & Fudge

 

August is, "Happiness Happens Month" and tomorrow - the 8th - is Happiness Happens Day. I personally think every month and day should be when we celebrate what makes us happy, but apparently August is a time to be sure to do so. So . . . take time today to bring happiness to your life and the lives of those you love.

Consider making some fudge - what isn't there about fudge to make us happy!!! A simple recipe is as follows . . . 
  • 1/4 cup butter
  • 1 can of sweetened condensed milk (NOT evaporated milk)
  • 1 cup semi sweet chocolate chips
Microwave on high for a minute or two until it melts, then stir until smooth. Add whatever extra ingredients you like. When my grandsons made this a couple years ago, my oldest grandson added dark chocolate mint pieces and mint bark - a delicious combination! My middle and youngest grandsons added brownie pieces and dark chocolate chunks (death by chocolate!) The boys are making fudge again in a couple days - cookie dough/chocolate fudge, mint chocolate fudge, and regular fudge - I'm sure they will be tasty, too!

Whatever you add, do so quickly, then spread in a buttered pan or a pan lined with parchment paper. Place in your refrigerator for a bit to set, then cut a small bite and enjoy!
