Today is National Ice Cream Pie Day - Let's Make Peanut Butter Ice Cream Pie!

My family LOVES peanut-butter pie! I've been making it for years . . . ever since my sister shared the recipe with me when I was first married . . . my family has been forever grateful to my sister for this! :^)

Well, a couple years ago it occurred to me, if I "tweaked" the recipe just a bit and substituted ice cream for the whipped cream, I might end up with a wonderful, new pie! So, I told my family they were going to be "guinea pigs" for a new peanut-butter pie recipe with ice cream in it . . . they said they were completely willing to be "guinia pigs" for that recipe! :^)

I'm very happy to say, the pie turned out wonderfully! It is extremely delicious . . . and makes a wonderful summer pie - or any time pie! So . . . since today is National Ice Cream Pie Day I'm delighted to share my new peanut-butter ice cream pie recipe with you . . . but first a few facts about ice cream - did you know . . .
  • On average, a scoop of ice cream will take about 50 licks to finish.
  • In the late 1700s, the vanilla ice cream flavor was rare and considered exotic.
  • Up to 90% of Americans have ice cream stored in their freezers.
  • The longest ice cream cone was made in Italy; it reached a mind-blowing 9 feet.
  • Bacon, avocado, licorice, garlic, Stilton cheese, and chili are among the strangest ice cream tastes available. That's some scary stuff.
So now for an ice cream pie recipe which you and your family will absolutely love . . .

Ingredients -
  • 1/2 cup peanut-butter
  • 1/2 bar of cream cheese
  • 1/2 box prepared chocolate pudding
  • 1/4 gallon vanilla ice cream
  • 1 chocolate cookie/graham pie crust
Directions -
  • beat peanut-butter and softened cream cheese together until sooth and creamy
  • prepare the pudding according to the pie recipe on the box - if you are having your grandchildren help you make this pie, this is the perfect thing for them to do . . . of course, you will NEED SOMEONE to eat the remaining pudding . . . a difficult job to do for sure! (When I made this pie my grandsons were here and told me "of course" they would be willing to eat the extra pudding!) :^)
  • add 1/2 of prepared pudding to your creamed peanut-butter and cream cheese and mix until well combined and creamy.
  • add softened ice cream - mixing until smooth and well combined
  • spoon filling into pie crust and put in freezer until ready to serve
  • serve with a bit of whipping cream on top!
