Thursday is National Pancake Day - Get Ready to Celebrate!

Thursday is National Pancake Day - who doesn't love pancakes so a special day to celebrate and enjoy them, totally makes sense! I have a tasty Apple Pie Pancake recipe to share with you, but first, some fun pancake info - did you know . . .

  • Only 7% of Americans say they're not fond of flapjacks.
  • 33% of people say buttermilk pancakes are their favorite, followed by 19% who say blueberry pancakes are their favorite.
  • 62% of people say their favorite pancake topping is syrup.
  • I'm with the 4% who say they prefer their pancakes with peanut butter on them.
  • There’s no denying that pancakes are a comforting food which makes us feel good. We enjoy them as children and adults and they are a beloved staple in many culture.

A few years ago I had the opportunity to review 365 30-minute meals from Better Homes & Gardens/Wiley and while it is filled with amazing recipes, I thought the one for Apple Pie Pancakes is one you all might enjoy . . . maybe Blueberry Pie Pancakes would also be wonderful!

Ingredients -
  • 1 1/2 cups flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon apple pie spice or cinnamon
  • 1/4 teaspoon salt
  • 2 lightly beaten eggs
  • 1 cup apple juice or 1/2 cup apple juice and 1/2 cup milk
  • 3 tablespoons melted butter
  • 2 teaspoons vanilla
  • 1/2 cup sliced apples (or 1/2 cup blueberries)
Directions -
  • mix together flour, sugar, baking powder, spice and salt
  • combine eggs, juice, butter and vanilla and add all at once to dry ingredients - stir until just moistened. (should be lumpy) add in apples - or blueberries
  • pour about 1/4 cup batter onto lightly greased, hot griddle and cook 1 - 2 minutes per side
  • top with syrup and enjoy!
These apple - or blueberry - pie pancakes are sure to be a big "hit" with your family . . . and could easily become grandma's "signature" breakfast!
