- There’s no denying that pancakes are a comforting food which makes us feel good. We enjoy them as children and adults and they are a beloved staple in many culture.
- 1 1/2 cups flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon apple pie spice or cinnamon
- 1/4 teaspoon salt
- 2 lightly beaten eggs
- 1 cup apple juice or 1/2 cup apple juice and 1/2 cup milk
- 3 tablespoons melted butter
- 2 teaspoons vanilla
- 1/2 cup sliced apples (or 1/2 cup blueberries)
Directions -
- mix together flour, sugar, baking powder, spice and salt
- combine eggs, juice, butter and vanilla and add all at once to dry ingredients - stir until just moistened. (should be lumpy) add in apples - or blueberries
- pour about 1/4 cup batter onto lightly greased, hot griddle and cook 1 - 2 minutes per side
- top with syrup and enjoy!
