Now, if you are like me, you are not able to eat very spicy foods, but this does not mean you are not able to enjoy a tasty, warm bowl of chili - just try my favorite recipe . . .
- Black beans
- White beans
- Pink beans if you can find them
- Chili beans
- Cheddar cheese
- Spices
- Slow-cooked and pulled pork loin
I cook the pork loin in my instant pot with one vidalia onion, one apple peeled and cut into small cubes, spices, and a bit of honey. When it finishes cooking, I pull it and add the pork, the onions, and some of the broth into my chili. While my pork is cooking, I put the beans into a pot - the number of cans of beans depends on how many people will be eating the chili, but I have at least one can of each type of bean. I add spices and allow it to simmer. When the pork is finished, I add the pork, onions, broth, and then add cheddar cheese and allow all of it to simmer until we are ready for it.
I serve with Fritos and sour cream. I also have additional spicy things available for people to add to their chili - just because I can not eat very spicy foods, it does not mean others wouldn't enjoy more spice!
Simple and lets people "personalize" their chili!
