Okay, I admit it, I have always struggled to make a perfect, fluffy biscuit. My biscuits typically turned out resembling a rock more than anything you actually wanted to eat. But, I found a recipe one day and discovered, not only was it easy and quick, but the biscuits turned out fluffy and wonderful! Plus, when you add cinnamon and make a little icing on the side for the children you love to top their biscuits with as they like, it makes a fantastic breakfast biscuit! So, of course I have to share this recipe with you.Ingredients -
- 2 cups flour
- 4 teaspoons baking powder
- 3 teaspoons sugar
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1/2 cup butter
- 1 egg
- 2/3 cup milk
Directions -
- combine flour, baking powder, sugar, cinnamon and salt
- cut in butter until mixture resembles course crumbs
- beat egg with milk and stir into dry ingredients until just moistened
- turn onto a well-floured surface and knead 12 times by folding dough over on itself, flattening and folding again and again - very important!!! Don't skip this step!!!!
- roll/press to 3/4 inch and cut with biscuit cutter . . . or as I do, use a heart-shaped cookie cutter for heart biscuits!
- place on a lightly greased baking sheet and bake at 450 for 8-10 minutes
- ENJOY!!!! :^)
The key to this biscuit is the folding of the dough over on itself, flattening and folding again and again! These biscuits turn out beyond enjoyable!
Make these with your grandchildren . . . they will have fun with the folding part - enjoy!
