grandma's cookbook - Potato, Squash, Oat Bread

I live in the house my grandparents built - my dad was born in this house and when I was a child, I often was able to have a sleepover at my grandparent's and always loved when my grandma baked bread - when it came out of the oven I always got a fresh-from-the-oven slice of bread to enjoy! What could be better! Now I'm the grandma in this house and when my grands come over this weekend, I'm making homemade potato, squash, oat bread - it will be wonderful for sure!

If you would like to try this recipe with the people you love, this is it . . . 

  • 3 1/2 cups) bread flour
  • 2 teaspoons instant yeast
  • 1/2 cup oats
  • 1/2 cup mashed potatoes, packed
  • 1/2 cup mashed squash, packed
  • 3 tablespoons room temperature butter
  • 1 cup (8 ounces) lukewarm water

  1. Whisk together the flour, yeast, salt, and oats.
  2. Add the potatoes and squash to the bowl of a stand mixer and mix in the butter. Add the dry ingredients and the water, and mix on low with the dough hook until combined, about three minutes.
  3. Knead the dough on the second speed for about six minutes. The dough should be smooth and elastic.
  4. Place the dough into an oiled bowl, cover, and let rise until doubled, about an hour. Turn the dough out onto a floured surface, and shape into log. Place the shaped loaf into a greased bread pan. Cover and let rise for 30 minutes. Preheat the oven to 425 degrees.
  5. Bake for about 25 to 30 minutes, until the internal temperature reaches about 195 degrees, and the bottom of the loaf sounds hollow when tapped. Transfer to a wire rack and cool completely.
