grandma's cookbook - Leftover Turkey Puff Pot Pie!

When we think about fixing turkey, we often think about Thanksgiving! I love the turkey, stuffing, mashed potatoes and gravy . . . yum! But, Thanksgiving is not the only time when we fix turkey. I have the Better Homes and Gardens The Ultimate Casseroles Book  with more than 400 comfort food classic recipes and I thought it would be fun to share a recipe I found in it, modified slightly to fit a tasty way to fix turkey - for a savory pie to fix during the Great American Pie Month! 

Turkey Puff Pot Pie (chicken potpie in puff pastry)

Ingredients -
  • 1 sheet frozen puff pastry
  • 2 tablespoons butter
  • 12 ounces left over, cooked turkey cut into bite-sized pieces
  • 2 medium shallots thinly sliced - or 1 cut sweet onion
  • 2 tablespoons flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon tarragon
  • 1/4 teaspoon pepper
  • 1 1/4 cup milk
  • 1/3 cup white wine or chicken broth
  • 1/2 cup frozen peas or corn
Directions -
  • Thaw puff pastry according to package directions
  • Preheat oven to 425 degrees
  • In a large skillet melt butter, add chicken and onions - cook for 2 minutes
  • Add flour, salt and spices and milk cook until bubbly - unless you have leftover gravy, then delete this step and just add gravy to your turkey and onions :-) and any spices you would like
  • Add wine - if you like - and peas or corn and heat thoroughly - keep warm
  • Unfold pastry sheet and on floured surface roll into 11-inch square - cut into four equal squares
  • Pour turkey mixture into four individual 8=ounce casseroles
  • Top with pastry, cut slit in top
  • Bake for 20 minutes
  • Enjoy!
What could be more of a "comfort food" than pot-pie??? You of course could add any veggies you like to make this you own special recipe! Happy Great American Pie Month!
